I think mosaic knitting is the easiest color work technique since you only work one color per row, no carrying yarns across. The scarf is completely reversible, looks the same on both sides but with a color variation. You can knit the scarf in any size; the pattern is easy to change. Instructions for a long fringed scarf and a buttoned neck warmer are included. The pattern calls for bulky #5 yarn (not super bulky) but could also be made with worsted weight yarn.
