The Tunisian (Afgan) stitch allows you to create mosaic crochet without cutting the yarn after each row, which improves comfort, speed and respect for the yarn ;) In addition, there are no tails left after each row, which you don't know what to do with later. I love the Tunisian stitch, because the pattern comes out perfectly even.

The pattern repeats every 21 stitches and 20 rows. So you can increase or decrease the final size as you wish. If you want to make something larger, e.g. a blanket in one piece, you will need a special long crochet hook with a safety tip so that the stitches do not fall off. For smaller things like a coaster or a pillow, you can do it with a regular crochet hook. In the Tunisian pattern, it is important that the crochet hook is larger than for regular traditional crochet.
